The Sprucewood Handmade Cookie Company in Cobourg is now open at its Ontario Street factory. Owner Chef Mark Pollard invited customers into the plant's outlet shop on Saturday. Manufacturing was delayed until factory construction was completed and the new Cobourg industry expects its official Grand Opening to occur in the fall.
The plant produces high quality shortbread cookies for the Canadian domestic market and for export to the United States, Europe, India and Dubai. Pollard told Northumberland 89.7 that he will be hiring additional staff very soon.
